Sweet Potato Latkes
As we explore more recipes, we are getting better at giving an Indian twist to dishes from other cultures. This latke recipe is one such dish. We replaced the traditionally used potatoes with sweet potatoes, which are rich in fiber and nutrients, and added a hint of spice.
Ingredients
- 1 sweet potato medium, peeled and grated
- ¼ cup fresh cilantro chopped
- ¼ cup green onions chopped
- 1 tsp cumin seeds
- ½ tsp crushed red pepper
- ½ tsp ground black pepper
- 1 egg beaten
- 2 tbsp 100% whole wheat flour
- salt to taste
- olive oil for shallow frying
Instructions
- Gently mix all the ingredients in a bowl.
- Heat 1 tsp oil in a skillet.
- Spoon about 2 tbsp of the latke batter into the hot oil. Flatten it gently with a spatula.
- Fry for about 1 minute or until golden brown. Flip and fry for another minute.
- Continue making latkes until all the batter is finished.
- Serve warm.
