Kohlrabi Fries
This is a low-calorie, nutrient-packed substitute for French fries. These fries aren’t crispy, in the traditional sense, but the natural crispness of kohlrabi makes them crunchy and an awesome snack. You can eat them on their own or serve them with your favorite dip.
Ingredients
- 3 kohlrabi bulbs washed thoroughly, leaves removed & peeled
- 1 tbsp olive oil
- 2 tbsp Roasted Vegetable Spice Mix (see link in notes)
- salt to taste
Instructions
- Preheat the oven to 400 F. Place a wire rack on top of a parchment-lined baking sheet.
- Cut the kohlrabi lengthwise into strips (about ¼ inch thick and 2-3 inches in length), similar to French fries.
- Place the strips into a bowl and toss them with the olive oil.
- Then add the spice mix and salt and shake the kohlrabi in the bowl so that it’s coated in the spices.
- Spread the kohlrabi fries on the prepared wire rack in a single layer.
- Bake the fries for 25-30 minutes, until the edges are slightly brown. Serve hot.
