No-Bake Sugar-Free Energy Bites

This energy ball takes our family’s favorite snacks and puts them together into these salty, sweet, and healthy bites. However, these can be adapted using your family’s favorite snacks, such as dried apricots, pecans, chocolate chips and hazelnuts. Also, we have toasted several of the ingredients, but this is optional. We prefer a toasted flavor, but these bites can be made with raw ingredients as well and will taste just as delicious.

Ingredients
  

  • 6 dry figs hard stems removed
  • 7 Medjool dates pits removed
  • ¼ cup raisins
  • 2 tbsp sesame seeds
  • ¼ cup shredded, unsweetened coconut
  • cup raw almonds
  • cup raw walnuts
  • 1 tbsp ghee (optional)
  • tsp salt

Instructions
 

  • Measure all the ingredients and set them aside. Keep the food processor ready.
  • Dry roast the sesame seeds in a skillet on medium heat for about two minutes or until the seeds start changing color. Turn the heat off and remove the seeds to a separate bowl for cooling. Since sesame seeds are delicate, watch carefully for any burning signs.
  • In the same skillet, dry roast the shredded coconut on medium-low heat for about a minute until the coconut starts changing color, but doesn’t become brown. Remove from the heat and set it aside.
  • Add the almonds and walnuts to the same skillet and dry roast them on medium heat for about 3-4 minutes.
  • Let all the ingredients cool down completely before adding them to the food processor.
  • Place all the ingredients into the food processor.
  • Pulse and grind until the ingredients are crushed and slightly sticky. It will be a sticky lump when you press it with your hands.
  • Remove it to a plate and divide the mixture equally before you hand roll each portion into a ball.
